Interested about food pairings and wine?
These beginner courses, conducted via Zoom in partnership with WOCSA (Wine and Olive Oil Canadian Sommelier Alliance), are fun and provide an informative and engaging way to taste wine with food.
- While there will be a presentation, the classes are meant to serve as a discussion and open dialogue on food and wine pairing, as well as provide interesting tips useful to better appreciate the world of wine.
- Alongside food and wine pairing, we will explore topics like wine tastings, wine service, versatile parings, terroir and more.
- The 3 courses, which run on a weekly basis, cost per person 50 CAD and can be also taken individually for 20 CAD. You can also participate in a single course with another person (connected from the same device) for 30 CAD, or take the whole course together for 75 CAD.
- The on-line classes can be taken from anywhere, but you will be responsible to having access to the wines and food required, which are not included in the course fees.
- If you live in Ontario, the wines are available at most LCBO stores while the foods at METRO stores.
- Participants who complete the 3 levels will receive a certificate of participation.

LEVEL 1
Intro to Wine Tasting and Food Pairing
We will be going over how to taste wine, some terminology and how some principles of food and wine pairing tecniques.
Recommended Wines:
1- WHITE: Anselmi San Vincenzo OR Soave Tessari Grisela
2- RED: Masi Bonacosta Valpolicella Classico or Zonin Valpolicella Classico
Recommended Foods: Prosciutto di Parma and light swiss cheese.

LEVEL 2
Food and Wine Pairing in Depth
We will explore how to create a wine cellar, open a bottle of sparkling, as well as storage and service.
Recommended Wines:
1- SPARKLING: Prosecco Villa Sandi OR Prosecco Il Fresco Villa Sandi
2- ROSE: Terres De Saint Louis Estandon AOC OR Provence Rose Chateau de Berne Inspiration
Recommended Foods: Speck and Coppa di Parma

LEVEL 3
Terroir: Taste of Place and Local Pairings
We will explore the concept of terroir and look at the "sense of place" in wine, focusing on Sherry. We also look at traditional examples of local food and wine pairings.
Recommended Wines:
1- SHERRY FINO: Sherry Tio Pepe Extra Dry Fino
2- SHERRY AMONTILLADO: Sherry Emilio Lustau Arcos Amontillado
Note: please check in advance store availability
Recommended Foods: Manchego and Queso Iberico

NOTE: Each course last around 75 minutes (included Q&A). Each level requires the purchase of two bottles of wine, as well charcuterie and/or cheese (not included the price).
After confirmation of purchase, you will receive via email a link to the Zoom class within 24 hours.
Food adjustments can be made to vegeterians. As an accompaniement to cheese and charcuterie, we recommend buying taralli or fresh bread.
Schedule adjustments can be made upon request to students living outside of the Eastern Time Zone.
Courses are normally offered in English, but can also be taught in Italian and French upon request.
